Let's ferment together!
In this workshop, we will dive into Koji, the magical ferment from Japan that is taking over the fermentation world both at home and in the commercial/gastronomical industry.
During this four hour event, we will introduce the history and traditions of Koji in Japan, explore the uses of Koji in the fermentation-kitchen, go into detail about how to make Koji, as well as make some Koji!
At the end of the workshop we will enjoy some koji-sacks together with a glass of a koji-based drink.
Each person will not only go home with knowledge, but also with ingredients (grains and spores) to make Koji as well a glass of tasty Shio-Koji. Optional is my favorite book on making Koji from Japan, KOJI for LIFE!
